Standing Rib Roast

Standing Rib Roasts are cuts most commonly associated with Prime Rib. These are the ultimate holiday roast; fatty, flavorful ribeye on the bone. This is your crowd pleaser.

One rib averages ~2.5-3 pounds and feeds 2-3 people.

Tenderloin

Our beef tenderloin is the perfect roast for those seeking an extremely tender center-of-plate dish. Tenderloin is best prepared in the oven; roast at a medium (300°F - 325°F) temperature, then sear and baste with butter and herbs.

One full tenderloin averages ~3.5-4.5 pounds with 6-8 ounces being a typical serving size.

Turkey

Fresh free-range Green Circle turkeys are Vegetarian-fed and raised without antibiotics or added growth hormones. We recommend ordering 1 pound per person and 1.5 pounds per person for ample leftovers.

Smoked Hams

It all begins with Kurobuta pork that has been pasture-raised without the use of antibiotics or hormones by a small collective of farmers dedicated to humane and sustainable methods. These average 8-10 pounds and feed ~6-8 people.

D'Artagnan's bone-in, spiral-sliced half hams have been smoked over Applewood without the use of nitrates, phosphates, or artificial injections.

Sausage & Bacon

All of our sausages are made right here in house using freshly ground heritage pork, natural hog casings, and our own special blend of seasonings and spices.

Australian Lamb

Grass-fed and grass-finished tender young lamb with a mild flavor. Certified humanely raised and pasture roaming.

FRENCHED RIB RACK $32.99/LB

One whole rack typically has 8 chops and averages ~1.5-2 pounds.

LEG OF LAMB $16.99/LB

A leg of lamb averages ~6-9 pounds.

LAMB SHOULDER $14.99/LB

Bone-in lamb shoulders average ~5-7 pounds.

Game Birds

ROHAN DUCK $8.99/LB

 

A whole duck typically weighs ~5 pounds and can feed 4-5 people.

Pot Roast

After searing your roast and setting it aside, deglaze the pan with beef stock and add your vegetables; add both to a buttered Dutch oven, season as desired, and bake at 275°F  for about 2 hours. Stir in your potatoes, then bake for an additional 45 minutes to an hour (or until your potatoes are soft and your roast is pull apart tender).

A 3 pound roast can feed about 6 people.
