Standing Rib Roast
Standing Rib Roasts are cuts most commonly associated with Prime Rib. These are the ultimate holiday roast; fatty, flavorful ribeye on the bone. This is your crowd pleaser.
One rib averages ~2.5-3 pounds and feeds 2-3 people.

Tenderloin
Our beef tenderloin is the perfect roast for those seeking an extremely tender center-of-plate dish. Tenderloin is best prepared in the oven; roast at a medium (300°F - 325°F) temperature, then sear and baste with butter and herbs.
One full tenderloin averages ~3.5-4.5 pounds with 6-8 ounces being a typical serving size.

Fresh free-range Green Circle turkeys are Vegetarian-fed and raised without antibiotics or added growth hormones. We recommend ordering 1 pound per person and 1.5 pounds per person for ample leftovers.

It all begins with Kurobuta pork that has been pasture-raised without the use of antibiotics or hormones by a small collective of farmers dedicated to humane and sustainable methods. These average 8-10 pounds and feed ~6-8 people.

Pot Roast
After searing your roast and setting it aside, deglaze the pan with beef stock and add your vegetables; add both to a buttered Dutch oven, season as desired, and bake at 275°F for about 2 hours. Stir in your potatoes, then bake for an additional 45 minutes to an hour (or until your potatoes are soft and your roast is pull apart tender).
A 3 pound roast can feed about 6 people.
